Made with only organic tart cherry juice and beef gelatin, these tart cherry gummies are simple, delicious, and healthy.
Tart cherries first caught my attention when I read they were a natural source of melatonin. Melatonin, as you may know, is a hormone that helps control our sleep-wake cycle. Our melatonin levels rise when it’s time to sleep and go down when it’s time to wake. Certain foods, such as tart cherry, have been found to raise our melatonin levels resulting in a better quality of sleep. With two kids under the age of four, this sounds like a very good thing to me.
In addition to improving our quality of sleep, research suggests that tart cherries are also effective in decreasing oxidative stress and inflammation. For example, drinking tart cherry juice versus placebo in a clinical study of overweight and obese individuals was found to significantly reduce the erythrocyte sedimentation rate (ESR) as well as lower other inflammatory markers such as TNF-alpha. Clinical studies have also found that consuming tart cherries reduces muscle pain after strenuous activity, decreases inflammatory biomarkers in inflammatory osteoarthritis, and improves memory and cognition in older adults with dementia.
Despite all of its health benefits, drinking tart cherry juice isn’t really something that appeals to my children. However, in gelatin form, it makes a delicious little treat. Best of all you only need two ingredients- beef gelatin and pure tart cherry juice. Compare that to the list of ingredients on most prepackaged gummy snacks!
Before you get started, you’ll also need to find a gelatin mold (or even just a glass container) for this recipe. There are plenty of cute molds out there- from gummy bears to gummy worms to the cute little mold I use whenever I make gummies. My mold holds just about 3/4 cup of juice and 3 tablespoons of gelatin, which also seems to be the right amount for our family as a batch of these will typically last a couple of days.

- ¾ Cup Organic Tart Cherry Juice
- 3 Tablespoons Beef Gelatin
- Gummy Mold
- In a glass measuring cup, combine ¼ cup organic tart cherry juice with 3 tablespoons beef gelatin. Stir and allow the mixture to gel.
- In a small saucepan, bring ½ cup organic tart cherry juice to a boil. Add the gelatinous mixture and stir continuously until dissolved. Bring to a boil again and remove from heat.
- Allow to cool for about 10 minutes. Pour into gummy mold and place in the refrigerator for about 1 hour.
- Remove gummies from mold. May be refrigerated for up to one week.
