Green Banana Flour Bread with Dandelion Greens

Ingredients

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Lightly grease a 8X4 inch loaf pan (I use avocado oil).

  2. In a blender or food processor, combine the dandelion greens, dates, milk, avocado oil, and eggs. Blend on high for about 30 seconds, stopping to scrape down the sides as needed. 

  3. Pour the contents of the blender into a large mixing bowl. Stir in the vanilla and mashed bananas until well blended.

  4. In a separate bowl, combine the green banana flour, cinnamon, baking soda, salt, nutmeg, and ground ginger. Pour the flour mixture into the wet ingredients and stir to combine. Pour batter into prepared loaf pan.

  5. Bake in preheated oven for approximately 40 minutes, or until a toothpick inserted into center of the loaf comes out clean.

  6. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
